Maraschino cherry

Maraschino cherries are cherries that have been marinated in food colouring, sugar syrup, sometimes alcohol, and sometimes almond flavouring. They are often dipped in chocolate to make liqueur cherries, used in desserts such as parfait or ice cream sundaes, or used in cocktails such as the Manhattan.

They have no connection to the liqueur called maraschino, other than a historical one. At one time, maraschino charries were marinated in maraschino; in modern times, almond-flavoured sugar syrup has been substituted.
