Erucic acid

Erucic acid is a fatty acid found in rapeseed, wallflower seed, and mustard seed, making up 40 to 50 percent of their oil.

Erucic acid is also known as cis-13-Docosenoic acid. Its structural chemical formula is CH3(CH2)7CH=CH(CH2)11COOH, the trans isomer is known as brassidic acid.

Canola is a special variety of rapeseed oil that contains between .5% and 1% erucic acid, or less.

Erucic acid is used to produce emollients, surfactants, and other chemicals. Erucic has been shown to have a variety of health impacts in studies.
